About Mustard

MUSTARD AVIATION, LLC is owned and operated by me, Stephen Layton.  I am a pilot based in Lovington, NM.  My flight experience began in gliders, then after several years moved to airplanes.  Commercial experience includes flying skydivers, ferrying airplanes, Ag (crop dusting), Corporate flying, and flight instruction.  I have over 2,700 hours total time as of April '25.

I came up with the name Mustard Aviation because it is easy to remember.  The name originates from the Bible, where Jesus used the mustard seed as an example of something tiny when teaching his disciples about faith.  He used it another time when describing the kingdom of God.  I am a Christian, so I was happy to come up with a name that was both meaningful and easy to remember.
